M\u00e9langer le beurre et la farine, p\u00e9trir jusqu\u2019\u00e0 l\u2019obtention d\u2019une boule de p\u00e2te.<br \/>\r\n \u00a0<br \/>\r\n Faire ensuite chauffer l\u2019huile dans une grande po\u00eale, jusqu\u2019\u00e0 ce qu\u2019elle fr\u00e9misse, faire revenir rapidement la viande de tous les c\u00f4t\u00e9s. Y ajouter les oignons et les champignons, les faire r\u00f4tir bri\u00e8vement. Verser le vin et la cr\u00e8me, bien \u00e9picer et ajouter la boule de farine et de beurre. Donner deux ou trois bouillons\u00a0: la sauce est li\u00e9e.<br \/>\r\n \u00a0<br \/>\r\n Il ne reste qu\u2019\u00e0 saupoudrer le tout de persil.
