Dissoudre la levure dans 2\u00a0c.s. d\u2019eau ti\u00e8de. Faire fondre le beurre.<br \/>\r\n \u00a0<br \/>\r\n Verser la levure lev\u00e9e dans une grande terrin\u00e9e pr\u00e9chauff\u00e9e. Ajouter les \u0153ufs et le beurre ti\u00e8de, puis, en alternance, la farine tamis\u00e9e et le lait l\u00e9g\u00e8rement chauff\u00e9. P\u00e9trir la p\u00e2te pendant 15\u00a0minutes, jusqu\u2019\u00e0 ce qu\u2019elle soit l\u00e9g\u00e8re et a\u00e9r\u00e9e (c\u2019est-\u00e0-dire qu\u2019elle forme des bulles) et qu\u2019elle ne colle plus aux mains.<br \/>\r\n \u00a0<br \/>\r\n Abaisser la p\u00e2te sur une \u00e9paisseur de 5\u00a0mm et en froncer les plaques beurr\u00e9es. Recouvrir d\u2019un linge et laisser lever pendant 2 \u00e0 3\u00a0heures dans un lieu chaud.<br \/>\r\n \u00a0<br \/>\r\n Bien m\u00e9langer le jaune d\u2019\u0153uf et la cr\u00e8me double. R\u00e9partir sur la p\u00e2te et garnir de sucre en grain.<br \/>\r\n \u00a0<br \/>\r\n Faire cuire 30\u00a0minutes dans le four pr\u00e9chauff\u00e9 \u00e0 210\u00a0degr\u00e9s jusqu\u2019\u00e0 ce que le g\u00e2teau se dore.
