Faire dorer les oignons hach\u00e9s fins dans le beurre et les r\u00e9pandre sur le poisson. Mouiller avec l\u2019eau et le vin blanc. Glisser le plat couvert dans le four pr\u00e9chauff\u00e9. \u00c0 partir du moment o\u00f9 le bouillon bout, laisser mijoter env. 10 minutes. \u00c9goutter le poisson et utiliser le fumet pour la sauce. R\u00e9server le poisson au chaud.<br \/>\r\n \u00a0<br \/>\r\n Faire fondre le beurre, ajouter la farine, remuer jusqu\u2019\u00e0 consistance onctueuse et retirer du feu. Mouiller avec \u00bd\u00a0l de fumet de poisson et bien m\u00e9langer. Ne remettre sur le feu que lorsque le m\u00e9lange est homog\u00e8ne et faire cuire en remuant sans arr\u00eat, pour que la sauce devienne onctueuse. Faire mijoter pendant 20\u00a0minutes.<br \/>\r\n \u00a0<br \/>\r\n Travailler au bain-marie les jaunes d\u2019\u0153uf, le vin blanc, le jus de citron et la cr\u00e8me jusqu\u2019\u00e0 obtention d\u2019un appareil mousseux et a\u00e9r\u00e9.
