Faire revenir des deux c\u00f4t\u00e9s dans l\u2019huile chaude. Ajouter l\u2019oignon et l\u2019ail hach\u00e9s, ainsi que tous les l\u00e9gumes coup\u00e9s fins, et cuire \u00e0 l\u2019\u00e9tuv\u00e9e pendant un bref laps de temps. D\u00e9glacer au vin blanc et au bouillon et ajouter les herbes aromatiques en brin ou en poudre et, le cas \u00e9ch\u00e9ant, la pur\u00e9e de tomate. Laisser mijoter au four \u00e0 temp\u00e9rature moyenne ou couvert sur la cuisini\u00e8re pendant environ 1\u00a0heure.<br \/>\r\n \u00a0<br \/>\r\n Sortir les jarrets et r\u00e9server au chaud. Tamiser la sauce en veillant \u00e0 presser les l\u00e9gumes contre la passoire afin d\u2019en extraire l\u2019ar\u00f4me.
