Couper les gendarmes et le jambon en petits d\u00e9s et les incorporer. Hacher fin les oignons, le persil et la ciboulette, les m\u00e9langer \u00e0 la p\u00e2te.<br \/>\r\n \u00a0<br \/>\r\n Laver les feuilles de bette, bien les \u00e9goutter, les \u00e9taler et enlever les grosses c\u00f4tes. D\u00e9poser un peu de farce sur chaque feuille et enrouler en un petit paquet. Piquer d\u2019un cure-dents si n\u00e9cessaire.<br \/>\r\n \u00a0<br \/>\r\n Faire chauffer le beurre et y \u00e9tuver l\u00e9g\u00e8rement les roulades de tous les c\u00f4t\u00e9s. Porter \u00e0 \u00e9bullition le lait et le bouillon de viande et y faire cuire un quart d\u2019heure les capuns.<br \/>\r\n \u00a0<br \/>\r\n Egoutter les capuns, les dresser sur un plat. Faire revenir bri\u00e8vement les lardons et les r\u00e9partir sur les capuns.
